Discarded food
Food waste has been one of those topics that we’ve touched upon here a lot in the Restaurant Supply blog. The amount of food wasted in the industry is absolutely staggering. You’ll be seeing more efforts of people reclaiming those discarded and ugly vegetables.
Sustainability
Going hand in hand with using food waste is the concept of sustainability. Chefs want to make sure that the food that is eaten can be carried on for generations to come, rather than simply used up – wasting the resources of the water and the soil. With the chef’s focus, that need for sustainability becomes infused in the restaurants.
Hawaiian Poke
This was on the top trends for last year, and it’s still ready to make a difference. We’re looking forward to seeing the deconstructed sushi make its way to all parts of the country with it’s wonderful ‘ice cream bowl’ like demeanor. Hawaiian and different.
