Mindfulness in the Kitchen

We’ve been in a lot of restaurants over the years.  The best restaurants in the world not only have a devotion and passion to the food that they cook on their commercial ranges, griddles, and other cooking equipment, but they have a top-notch service staff.  What do we believe is the number one desired characteristic for a server? What’s the one trait that brings all of the traits together?

Mindfulness.

A mindful server is one who is in the moment, one who is not only aware of their surroundings, but someone who is consistently anticipating the various situations which may arise.  They are delightful, because they know by a simple look whether you’re thirsty and what you need.

Developing mindfulness as a server takes practice, but it also takes patience. The good ones can tell when something’s happening, and know when the customers are … well, not necessarily telling the truth about their experience in the restaurant.  These servers are incredibly valuable to restaurant managers, or may be restaurant managers themselves.

Being observant, mindful, and aware of the restaurant’s patrons goes a long way, and adds to the A+ ratings that very few places get. What, in your opinion, is the number one trait that you’d like to see in your server?  Tell us in the comments!
