A Cooper Atkins Thermistor is a sensor embedded in a ceramic, glass or metal bead that is attached to an alloy wire. The sensor can discriminate very accurately within a limited temperature range. In addition to the Cooper Atkins thermistor instrument you will also need at least one probe (sold separately) to measure temperatures in a specific location such as food interior or surfaces of equipment.
