A Thermocouple is a coupling of two dissimilar alloy wires. These wires are welded into the tip of a probe or set in conductive potting. Using the differential between the alloys, a Cooper Atkins Thermocouple instrument, plus a thermocouple probe (sold separately) can accurately measure temperatures either food interiors or surfaces, depending upon the probe.
