Using electricity in the most productive way possible, the 720201102 has a direct contact heating system that heats water to precise temperatures. The well, in which heating elements lie, is self-insulated, and because the element itself is cast-in aluminum, it transfers heat incredibly efficiently. The capillary tube thermostat focuses heat so that items are heated all the way through, leaving no cold spots. The easy to access controls are recessed on both sides so that temperatures cant be accidentally changed, potentially burning foods.
