The Vollrath 72105 is a Cayenne Model Drop-In Food Warmer with Drain. Created for efficiency, the 72105 boasts the unique direct contact heating system, which allows water to be poured onto the element for effective heat transfer. To retain heat and yet resist scale build-up, thermoset fiber-reinforced self-insulating resin is used for the lining of the well. Both the resin and cast-in non-stick aluminum dome heating element, which uses up to 25% less energy, makes cleaning this appliance easier. The wide lip has room to capture moisture and drain it back into the well, and because you can put more water into this drop-in, you dont have to worry about constantly having to check it. With a range of 10 possible temperatures, from 80°F to 200°F, the capillary tube thermostat control provides consistent and constant heat for the even and thorough warming of foods.
